Mine would have to be Tim Burton. I just love the way he can take a completely random, messed up plot that could scar people and turn it into something so fun and querky (see Corpse Bride and The Nightmare Before Christmas).
I also have to mention Quentin Tarantino for writing and directing my favourite movie of all time, Inglourious Basterds

Quentin Tarantino tops my list. Only Tarantino can make a conversation about McDonalds food seem incredibly awesome.

Close seconds are Robert Rodriguez, Tim Burton and Peter Jackson.

Danny Boyle, Wes Anderson, Tim Burton and Peter Jackson are great. James Cameron and Spielberg get an honorable mention. But the true artist is really Micheal Bay, I mean come on, he's got MICHEAL BAYSPLOSIONS!!! kaboom! :) jk

ALos Paul Verhoeven, Ridley Scott, Kevin Smith, and Steven Spielburg. George Lucas gets an honorable mention.

Most definitely Tim Burton. I love what J.J Abrams did to Star Trek, and George Lucas; Original Trilogy.

Takashi Miike. (Odishun, A tale of two sisters.)
David Lynch. (Blue velvet, Mulholland dr.)
Francis Ford Copolla. (Apocalypse now, Godfather II)
Stanley Kubrick. (The shining, Clockwork Orange, Full metal Jacked... the list goes on really)

So far at least. I like alot of directors but most of them have only made a few great movies. I need to watch some more Tarkovsky. I think he would made the list if I saw some more of him.

EDIT: Oh! Old Tarantino before he had to make homages to everything. I loved Reservoir dogs and Pulp Fiction was fine too. The last many years though I haven't liked a single movie of his.

I've been on a kick of his films lately, I'd only seen a few but I got on a roll. The man is to anime what Pixar is to 3D.

Park Chan-wook (Oldboy, Thirst, I'm a Cyborg but that's Ok)! But I do love a bit of the Coen Brothers, Tarantino and Pedro Almodovar

I hate Tim Burton though. The only film he's directed that I've enjoyed is Edward Scissorhands and I guess Sleepy Hollow was alright.

I'm guessing you mean Irvin Kershner, but Lucas didn't direct RotJ either.

Yeah, Tarkovsky is possibly my favourite too. "Stalker" is very good, but "Mirror" and "Andrei Rublev" especially are my favourites. I'd also add Ozu, Bergman and Mizoguchi to that.

Damn your right. Somehow got it into my head that they were made by the same guy. They are kinda similar in many ways.

You need to say 2001: A Space Odyssey, Barry Lyndon, Eyes Wide Shut... There's no one quite like Kubrick.
